Ingredients

2 Tuna fillets

salt

sesame seed

grape seed oil

sesame oil

cooked white rice

kewpie mayo
optional
Sauce

2 Tbsp oyster sauce

1 Tbsp Ponzu

1 Tbsp soy sauce
Salad

Spring Greens
or Baby greens

Carrot
Shaved

Pickled Ginger
minced

Vinaigrette

Instructions
Step 1
Salt and rest tuna for 10 minutes on counter
Step 2
Pat dry with clean napkin and dust generously with sesame seeds
Step 3
Preheat pan on high. Add grape seed oil and 1/8 tsp of sesame oil
Step 4
Sear tuna on All sides for 45-60 seconds each (30-45 for rare tuna)
Step 5
Remove and rest, covered.
Step 6

Step 7
Add all the ingredients to hot pan, over low heat.
Step 8
stir to combine and place in a heat proof dish
Salad
Step 9
Toss the washed greens, carrot and ginger with vinaigrette
Step 10
Use the dressing sparingly, this is an edible garnish to lighten the dish
Plating
Step 11
Create a bed of white rice, place sliced tuna on top. Lightly drizzle with sauce and kewpie mayo (optional).
Step 12
Garnish plate with greens. *Enough to eat, but not so much it looks like a salad plate*
Step 13
Sprinkle with sesame seeds and scallion
