Ingredients

1 lb Pork Chops
Thick cut- Bone in

1 cp chicken stock

1 Tbsp brown sugar

0.25 cp apple cider vinegar

2 oz Bourbon
optional

1 Tbsp unsalted butter
Rub

2 Tbsp AP flour

1 tsp smoked paprika

1 tsp dark chili powder

1 tsp garlic powder

2 tsp onion powder

1 tsp ground mustard

1 tsp salt

0.5 black pepper
Instructions
Step 1
Combine the rub ingredients. Completely coat all sides of your chops.
Step 2
Let them rest on the counter, 25-30 minutes
Step 3
Pre heat your oven to 400°
Step 4
Once rested, add chops to a medium/ high heat, oven safe skillet.
Step 5
Brown the first side, then flip.
Step 6
Add chicken stock to the pan, remove from heat and place in the oven.
Step 7
Cook to an internal of 140° is reached. (Thermometer or probe is recommended)
Step 8
Remove chops from the pan and rest, covered.
Step 9
Add vinegar, brown sugar and bourbon to the pan.
Step 10
Over medium/ low heat, reduce until the sauce begins to thicken.
Step 11
Remove from heat and stir in butter until incorporated
Step 12
Garnish with Chive for serving
