1 lb Pork Chops
Thick cut- Bone in
1 cp chicken stock
1 Tbsp brown sugar
0.25 cp apple cider vinegar
2 oz Bourbon
1 Tbsp unsalted butter
2 Tbsp AP flour
1 tsp smoked paprika
1 tsp dark chili powder
1 tsp garlic powder
2 tsp onion powder
1 tsp ground mustard
1 tsp salt
0.5 black pepper
Step 1Combine the rub ingredients. Completely coat all sides of your chops.
Step 2Let them rest on the counter, 25-30 minutes
Step 3Pre heat your oven to 400°
Step 4Once rested, add chops to a medium/ high heat, oven safe skillet.
Step 5Brown the first side, then flip.
Step 6Add chicken stock to the pan, remove from heat and place in the oven.
Step 7Cook to an internal of 140° is reached. (Thermometer or probe is recommended)
Step 8Remove chops from the pan and rest, covered.
Step 9Add vinegar, brown sugar and bourbon to the pan.
Step 10Over medium/ low heat, reduce until the sauce begins to thicken.
Step 11Remove from heat and stir in butter until incorporated
Step 12Garnish with Chive for serving
