Sweet Potato Fries

2 yams
   large, peeled & cut into 1/4 inch fries
1 Tbsp brown sugar
1 tsp salt
1 tsp smoked paprika
1 tsp ground ginger
⅛ tsp ground clove
½ tsp cinnamon
0.5 corn starch
½ cup water
   cold
Seasoning
Step 1
Whisk together brown sugar, salt, Cinnamon, paprika, ginger & clove. Set aside
Fries
Step 1
Soak fries in cold water for 30 minutes
Step 2
Drain and rinse fries well. Return to bowl and soak in cold water another 30 minutes.
Step 3
Begin billing a put of water.
Step 4
Drain and rinse potatoes once again.
Step 5
Place fries into the pot of boiling water. Return to a boil and cook the three fries for 5 minutes.
Step 6
Whisk together the cornstarch and cold water in a bowl large enough to dip your into. (Save a dish and use the same bowl you used to soak your fries)
Step 7
Drain parcooked fries and while still warm dip into the slurry.
Step 8
Fry: go from dipping into slurry, directly into a 350° fryer until golden brown. Remove, season and serve. Freeze: place warm dipped fries into a lined baking sheet. Place in freezer at least 4 hours. Store once in an airtight container.
Step 9
Frozen Fries can be baked @ 400° Fried @ 350° Air fryer @ recommended temperature for French fries. (Spray with a light coating of oil to achieve an optimal finish)
