large, peeled & cut into 1/4 inch fries
1 Tbsp brown sugar
1 tsp salt
1 tsp smoked paprika
1 tsp ground ginger
⅛ tsp ground clove
½ tsp cinnamon
0.5 corn starch
½ cup water
Step 1Whisk together brown sugar, salt, Cinnamon, paprika, ginger & clove. Set aside
Step 1Soak fries in cold water for 30 minutes
Step 2Drain and rinse fries well. Return to bowl and soak in cold water another 30 minutes.
Step 3Begin billing a put of water.
Step 4Drain and rinse potatoes once again.
Step 5Place fries into the pot of boiling water. Return to a boil and cook the three fries for 5 minutes.
Step 6Whisk together the cornstarch and cold water in a bowl large enough to dip your into. (Save a dish and use the same bowl you used to soak your fries)
Step 7Drain parcooked fries and while still warm dip into the slurry.
Step 8Fry: go from dipping into slurry, directly into a 350° fryer until golden brown. Remove, season and serve. Freeze: place warm dipped fries into a lined baking sheet. Place in freezer at least 4 hours. Store once in an airtight container.
Step 9Frozen Fries can be baked @ 400° Fried @ 350° Air fryer @ recommended temperature for French fries. (Spray with a light coating of oil to achieve an optimal finish)
