Spaghetti Sauce

28 oz can whole stewed tomatoes
san marzana
1 Tbsp tomato paste
2 Tbsp olive oil
3 Tbsp italian seasoning
6 cloves garlic
0.5 shallot
½ tsp red pepper flake
0.5 cp red wine

0.25 cp grated parmesan
rind is perfect for this

0.75 lb beef
or italian sausage- optional
1 lb pasta
al dente

Instructions
For Smooth sauce
Step 1
Puree shallot, garlic, herbs and tomatoes before cooking
The Sauce
Step 1
Heat olive oil in large sauce pan over medium heat.
Step 2
Once warm (light shimmer on oil) add tomato paste. Stir gently until it begins to carmelize.
Step 3
Add garlic and shallot. Cook until fragrant and begin to take color.
Step 4
Add tomato, herbs and red wine. Stir to combine.
Step 5
Bring contents to a light simmer.
Step 6
Reduce heat to low (as low as your stove top goes)
Step 7
Roughly chop the tomatoes with a spatula or spoon. (If you did not puree your ingredients)
Step 8
Cover/ vented, allow to simmer on low heat. 3 - 4 hours Or until reduced by 1/8th
Step 9
Remove from heat and add parmesan
Step 10
Dress your pasta with a little sauce. (Do not mix pasta and sauce together/ Do not serve naked pasta)
Step 11
Add any optional prepared ingredients (i.e. vegetables or meat)
Step 12
Plate pasta, top with sauce and garnish.
