28 oz can whole stewed tomatoes
1 Tbsp tomato paste
2 Tbsp olive oil
3 Tbsp italian seasoning
6 cloves garlic
½ tsp red pepper flake
0.5 cp red wine
0.25 cp grated parmesan
rind is perfect for this
0.75 lb beef
or italian sausage- optional
1 lb pasta
For Smooth sauce
Step 1Puree shallot, garlic, herbs and tomatoes before cooking
Step 1Heat olive oil in large sauce pan over medium heat.
Step 2Once warm (light shimmer on oil) add tomato paste. Stir gently until it begins to carmelize.
Step 3Add garlic and shallot. Cook until fragrant and begin to take color.
Step 4Add tomato, herbs and red wine. Stir to combine.
Step 5Bring contents to a light simmer.
Step 6Reduce heat to low (as low as your stove top goes)
Step 7Roughly chop the tomatoes with a spatula or spoon. (If you did not puree your ingredients)
Step 8Cover/ vented, allow to simmer on low heat. 3 - 4 hours Or until reduced by 1/8th
Step 9Remove from heat and add parmesan
Step 10Dress your pasta with a little sauce. (Do not mix pasta and sauce together/ Do not serve naked pasta)
Step 11Add any optional prepared ingredients (i.e. vegetables or meat)
Step 12Plate pasta, top with sauce and garnish.
