Elephant Ears (No Yeast)

2 cups ap flour
1 Tbsp baking powder
1 tsp salt
2 Tbsp sugar
2 tsp vanila extract
0.75 milk
110-125 degrees
2 Tbsp shortening
Or Butter, warmed/ melted
Neutral oil, for frying
Cinnamon
Sugar, For topping
Substitute
2 cps Self Rising Flour
Substract baking powder & salt
Instructions
Step 1
Cream sugar and shortening until it begins to lighten in color
Step 2
Add milk and vanilla to mixture.
Step 3
Fold in dry ingredients 1/4 at a time until fully combined.
Step 4
Cover and rest for 15 minutes
Step 5
Remove to lightly floured workspace
Step 6
Cut dough into equal size pieces and shape in to balls
Step 7
On your floured work surface. Roll or press each dough ball into a thing disk (You should be able to see your hand through the dough)
Step 8
Dropping away from you, gently place a disk into the oil.
Step 9
Fry, alternating sides until they are golden brown. (2-3 minutes each piece)
Step 10
Remove, drain and top however you like.
Step 11
These will hold 2-3 days, covered on the counter.
