1 lb Black Beans
3 garlic cloves
1 Tbsp oregano
3 Strips Bacon
1 tsp cumin
0.25 cp Stock
2 bay leaves
Step 1In a large Pot, add dry beans, Bay leaves, !/2 shallot, garlic, oregano, cumin, 3 tbsp salt, 2 tsp pepper and 1 gl of water.
Step 2Bring to a boil then reduce heat to low and allow to simmer.
Step 3Cook until the beans are tender
Step 4Remove bay leaves and drain beans through a fine mesh strainer.
Step 5Add diced bacon to pan over medium low heat.
Step 6Once the fat is rendered, add remainder of shallot (minced)
Step 7Deglaze pan with stock and S&P to taste.
Step 8Return beans to the pan and stir to combine.
