Ingredients

1 lb Black Beans

1 shallot
large

3 garlic cloves

1 Tbsp oregano

3 Strips Bacon
Thick Cut

1 tsp cumin

salt

pepper

0.25 cp Stock

2 bay leaves
Instructions
Step 1
In a large Pot, add dry beans, Bay leaves, !/2 shallot, garlic, oregano, cumin, 3 tbsp salt, 2 tsp pepper and 1 gl of water.
Step 2
Bring to a boil then reduce heat to low and allow to simmer.
Step 3
Cook until the beans are tender
Step 4
Remove bay leaves and drain beans through a fine mesh strainer.
Step 5
Add diced bacon to pan over medium low heat.
Step 6
Once the fat is rendered, add remainder of shallot (minced)
Step 7
Deglaze pan with stock and S&P to taste.
Step 8
Return beans to the pan and stir to combine.
