Classic Italian Sausage

1 tsp paprika
5 garlic cloves
crushed
1 tsp onion powder
½ tsp caraway seed
or Fennel seed
½ tsp salt
½ tsp pepper
¼ tsp red pepper flake
¼ tsp cayenne pepper
1 tsp curing salt
Instructions
Step 1
Cube pork (1"-1.5" squares)
Step 2
In a glass or metal bowl, add pork and all the seasonings. Mix Well
Step 3
Cover and refrigerate at least 12 hours and up to 48.
Step 4
1 hour before grinding, put meat and grinding tools in the freezer.
Step 5
Grind meat to your desired texture
Step 6
Prepare your way: links, patties, loose pack or casing
Step 7
Cook to at least 150 degrees to render the curing salt inert
