
2 lbs lean ground beef
browned drained

2 oz tomato paste

24 oz tomato
stewed, san marzana

1.5 cps tomato juice

4 Tbsp chili powder

1 Tbsp cumin
or substitute smoked paprika

1 Tbsp oregano

2 Tbsp onion powder

2 Tbsp garlic powder

salt
towards end of cooking

2 oz dark chocolate

1 Tbsp oil

Instructions
Step 1
Over medium-high heat, add oil and tomato paste to a large pot
Step 2
Stir continuously until tomato paste begins to caramelize
Step 3
reduce heat to medium and add tomato juice, stir to combine
Step 4
Add stewed tomato, break up tomatoes with a spoon or spatula
Step 5
Add remaining ingredients (Less salt) stir on medium until it reaches a low simmer. (Add beans here, if you choose to use them)
Step 6
Reduce heat to warm and cover. Let cook approx 2 hours, stirring occasionally
Step 7
Taste, adjust seasoning.
