Bolognese (The Easy Way)

Ingredients
Required
1 lb Ground meat
Whatever kind you prefer
2 strips Bacon
Sub 1tbsp rendered pork fat
2 Tbsp tomato paste
1 cp chicken stock
low/ no salt
0.5 cp white wine
White wine vinegar
1 cp pasta water
4 Tbsp grated parmesan
1 lb pasta
wide- flat or textured
Options for added flavor and quantity
4 oz onion
grated
1 celery stalk
grated
1 carrot
grated
1 Tbsp garlic paste
¼ tsp nutmeg
2 Tbsp Sun dried tomato
minced
1 roma tomato
fine chop
parsley
parmesan
olive oil
Instructions
Step 1
In a high wall or large skillet brown meat and bacon
Step 2
Add onion, carrot, celery and garlic over medium heat. Cook until the onion and garlic are fragrant.
Step 3
Reduce heat to medium/ low and add tomato paste. Stir to combine as it begins to carnalize.
Step 4
Pour in stock, wine, pasta water and sun dried tomato. Stir to combine and bring to a simmer.
Step 5
Season with salt, pepper and nutmeg.
Step 6
Stir vigorously for 1-2 minutes as you add the parmesan.
Step 7
Toss with cooked pasta and serve topped with parmesan, parsley and olive oil.
